Classic BBQ Chicken
PLACE chicken thighs, marinade, sea salt and white pepper in a large zip-top bag and store in the fridge for at least 1 hour (and up to 24 hours) before grilling.
WHEN ready to cook, bring your grill to high heat.
PLACE thighs on the grill and allow to cook for five minutes on first side. Once the thigh has touched the grill, do not move it (this will give your meat a nice char). After five minutes is up, flip the thighs to the second side and grill until the thigh is cooked through, about five more minutes.
REMOVE the thighs from the grill and allow to rest for up to five minutes. Slice, serve and enjoy.
We love this simple grilled chicken thigh recipe over the Cauliflower Couscous-Spinach Salad from page 194 of The Whole30 Cookbook. Simply sub in the grilled chicken for the salmon.
Spicy Sirloin Kabobs
1-1.5 lbs. of beef sirloin, cut in 2” pieces
1/2 bottle of The New Primal Spicy Marinade
2 yellow squash
1 green bell pepper
1 red bell pepper
1 orange bell pepper
1 tsp. of sea salt
1/2 tsp. of black pepper
DICE all vegetables into 1” uniform pieces, except for the onion, which should be sliced into thick moon-shaped slices.
PLACE your diced sirloin and veggies, marinade, sea salt and black pepper in a zip-top bag and store in the fridge for at least 1 hour (and up to 24 hours) before cooking.
BEFORE assembling the kabobs, soak wooden skewers in water for an hour (this will keep them from burning on the grill).
ASSEMBLE the kabobs by threading the veggies and beef on skewers. WHEN ready to cook, bring your grill to high heat.
PLACE the kabobs on the grill and allow to cook for 5 minutes per side. Do not move the kabobs once they are on the grill.
REMOVE from grill, serve and enjoy.
We think finger foods work really well with these kabobs. You can’t have a Memorial Day gathering without deviled eggs, so might we suggest the Baja-Style Deviled Eggs from page 270 of The Whole30 Cookbook? We’re also inclined to make a batch of Guacamole-Stuffed Mini Peppers from page 271. Finger foods at their finest.
Grilled Citrus Herb Salmon
1 to 1.5 lbs. wild-caught, skin-on salmon filet
1/2 bottle of The New Primal Citrus Herb Marinade
1 tsp. of sea salt
1/2 tsp. of black pepper
Lemon slices, to garnish
Fresh parsley, to garnish
PLACE salmon, marinade, sea salt and black pepper in a zip-top bag and store in the fridge for 1-2 hours before cooking.
WHEN ready to cook, bring your grill to high heat. Remove salmon from marinade.
PLACE the salmon on the grill, skin-side down allow to cook for for two minutes. Flip salmon to alternate side and cook for two more minutes. Check for donness and remove from grill when it is cooked to your preference. Allow to rest for a few moments before serving.
GARNISH with fresh lemon and parsley, and serve.
The Celery Root-Carrot Remoulade from page 138 of The Whole30 Cookbook is like a dressed-up coleslaw. It will pair perfectly with this grilled salmon for a light, tasty early summer meal.
