Caraway-Spiced "Pork" Skillet

This simple dish pops with flavor thanks to the caraway, mustard, paprika, and cayenne, and the sweet-tart flavor of Granny Smith apple. Using pre-cut vegetables like this colorful broccoli slaw saves you time in the kitchen.

Ingredients

  • 1 package (12 to 16-ounce) broccoli slaw
  • ½ of a small onion cut into slivers
  • 1 small Granny Smith apple cut into slivers
  • 1 tbsp coconut oil or extra virgin olive oil
  • 2 tsp caraway seeds crushed
  • 1 tsp dry mustard
  • 1 tsp grated lemon zest
  • ½ tsp paprika
  • ½ tsp coarse salt
  • ¼ tsp cayenne pepper (optional)
  • 1 box (10-oz) Plant-Based Whole30-compatible "pork"
  • pistachios
  • fresh berries

Instructions

  • IN a large skillet, cook the broccoli slaw, onion, and apple in coconut oil over medium heat until crisp-tender, 3 to 4 minutes. Stir in caraway seeds, mustard, lemon zest, paprika, salt, and cayenne pepper, if using.
  • PUSH the vegetables to the edge of the skillet, creating an empty center. Add pork and cook, stirring occasionally, until heated through, 2 to 3 minutes. Stir the broccoli slaw and pork together.
  • SERVE with pistachios and berries on the side.

Notes

Tip: This slaw makes a great side dish for any meal. If you can’t find a compatible “pork” product, you can use scrambled seasoned tofu or roasted chickpeas as your protein.
