This simple dish pops with flavor thanks to the caraway, mustard, paprika, and cayenne, and the sweet-tart flavor of Granny Smith apple. Using pre-cut vegetables like this colorful broccoli slaw saves you time in the kitchen.
IN a large skillet, cook the broccoli slaw, onion, and apple in coconut oil over medium heat until crisp-tender, 3 to 4 minutes. Stir in caraway seeds, mustard, lemon zest, paprika, salt, and cayenne pepper, if using.
PUSH the vegetables to the edge of the skillet, creating an empty center. Add pork and cook, stirring occasionally, until heated through, 2 to 3 minutes. Stir the broccoli slaw and pork together.
SERVE with pistachios and berries on the side.

Tip: This slaw makes a great side dish for any meal. If you can’t find a compatible “pork” product, you can use scrambled seasoned tofu or roasted chickpeas as your protein.
