Ingredients
4Polish sausage linkscan sub pre-cooked sausage of choice
1Bell pepper
1Onion
1Zucchini
4Medium potatoescan sub sweet potato
3tbspavocado oilcan sub cooking oil of choice
Instructions
CHOP bell pepper, zucchini, onion, and sausage and combine in a skillet with cooking oil of choice.
SAUTE for a few minutes until sausage is warmed through and veggies are cooked al dente.
MEANWHILE, microwave russet or sweet potatoes for about 5 minutes, or until you can easily pierce them with a fork.
SLICE potatoes down the middle and add some ghee before topping with veggies, sausage, and sauces of choice like guacamole and ranch!
