CUT zucchini squash in half and scrape out some of insides to make a trench.
SPRINKLE with salt and pepper and bake for about 10 minutes at 350°F.
MEANWHILE, brown ground beef in a skillet and add in taco seasoning to taste.
REMOVE zucchini from oven and fill with ground beef.
TOP with salsa and sliced avocado or guacamole.
