5 Ingredient Spicy Egg Cucumber Tapas

This is a bite-sized, fresh, healthy twist on egg salad. We love to use our partners' at Primal Kitchen's Chipotle Lime Mayo to give it a tangy, spicy kick, but feel free to use what you like or make your own.

Ingredients
  

  • 6 hard-boiled eggs purchase pre-cooked or cook your own
  • 1 medium cucumber sliced
  • 1/4 cup mayonnaise we love this with Primal Kitchen's Chipotle Lime Mayo, but feel free to use what you like or make your own
  • 3 tbsp green onion sliced
  • 2 handfuls black olives sliced

Instructions
 

  • DICE the hard-boiled eggs and olives and chop the green onion into thin slices.
  • MIX the eggs, olives, green onions, and mayo in a bowl.
  • SLICE the cucumber into rounds and top with the egg mixture.
  • Enjoy!
