Ingredients
1.25cupsraw unsalted cashews
2/3cupwater
3tbsplime juice (about 2 ½ small limes or 1 ½ large limes)
1/2tspsalt
1/2tsponion powder
Instructions
BLEND all the ingredients in a high speed blender* on high until very smooth. If needed, scrape down the sides and blend again.
STORE in a sealed container in the refrigerator for up to 2 weeks.
*NOTE: If you do not have a high-speed blender, soak the cashews in the water + lime juice for at least two hours, up to overnight, to soften and blend more easily.
