Masala Sweet Potato Hash and Eggs

Ingredients

  • 1 tbsp ghee
  • 1 medium onion diced
  • 2 large garlic cloves minced
  • 1 tsp garam masala spice
  • 2 tsp coriander powder
  • ¼ tsp turmeric powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 large sweet potato peeled and diced into ½-inch cubes
  • 2-3 tbsp water
  • 2 cups of greens of choice such as baby spinach or kale
  • ½ small lemon juiced (about 1½ tbsp)
  • 4 eggs
  • Compatible chili oil and fresh cilantro for garnish

Instructions

  • HEAT the ghee over medium flame in a large skillet or pan.
  • ADD the diced onions and garlic and saute for 4-5 minutes until the onion starts to brown.
  • ADD the spices to your onions and cook for about 1 minute.
  • STIR in the cherry tomatoes and cook for approximately 5 to 7 minutes, until the tomatoes have softened. You can help the tomatoes soften by gently pressing down on them with the back of your spatula/spoon.
  • ADD the sweet potatoes along with the water. Give everything a mix and cover to cook for 10 to 12 minutes, or until the sweet potatoes are tender.
  • STIR in the greens of choice along with a squeeze of half a lemon and cook for another 1 minute.
  • MAKE four wells in the sweet potato hash and crack an egg in each. Cover and let cook until eggs are to your liking.
  • REMOVE the skillet from heat, and drizzle with compatible chili oil, salt & pepper to taste, and garnish with fresh cilantro.
