HEAT the ghee over medium flame in a large skillet or pan.
ADD the diced onions and garlic and saute for 4-5 minutes until the onion starts to brown.
ADD the spices to your onions and cook for about 1 minute.
STIR in the cherry tomatoes and cook for approximately 5 to 7 minutes, until the tomatoes have softened. You can help the tomatoes soften by gently pressing down on them with the back of your spatula/spoon.
ADD the sweet potatoes along with the water. Give everything a mix and cover to cook for 10 to 12 minutes, or until the sweet potatoes are tender.
STIR in the greens of choice along with a squeeze of half a lemon and cook for another 1 minute.
MAKE four wells in the sweet potato hash and crack an egg in each. Cover and let cook until eggs are to your liking.
REMOVE the skillet from heat, and drizzle with compatible chili oil, salt & pepper to taste, and garnish with fresh cilantro.
