Mediterranean Egg Salad (No Mayo!)

Ingredients

  • 8 eggs, hard-boiled and peeled and quartered
  • ½ cup fresh parsley, chopped
  • ½ cup fresh mint, chopped
  • 1 cup cherry tomatoes, quartered
  • ½ English cucumber, quartered and chopped
  • 1 medium red onion, chopped
  • ¼ cup chopped walnuts
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp capers
  • 2 tsp Aleppo pepper (or paprika)
  • 2 tsp sumac
  • salt and pepper to taste

Instructions

  • ADD all your ingredients to a bowl and gently toss to combine.
  • TASTE for seasoning and adjust according to your taste.
