Whole30 Air Fryer Scotch Eggs

Ingredients

Whole30 Scotch Eggs

  • 3/4 cup pecans or almonds
  • 1 egg beaten
  • 2 tbsp Whole30 compatible nut milk, or water
  • 1 tbsp chopped fresh parsley or 1 tsp dried parsley
  • 3/4 lb Whole30 compatible ground breakfast sausage
  • 4 hard-cooked eggs peeled

Braised Spinach

  • 1/2 cup Whole30-compatible beef broth
  • 4 cups baby spinach
  • 1/2 tsp apple cider vinegar

Harissa Dipping Sauce

  • 2 tbsp Whole30-compatible harissa sauce
  • 1 tsp Whole30-compatible Dijon mustard

Instructions

Air Fryer Method

  • PREHEAT air fryer to 400°F.
  • IN a food processor, chop nuts until finely chopped but not ground. Transfer to a shallow bowl or plate.
  • IN another shallow bowl, whisk together the 1 beaten egg, nut milk, and parsley.
  • DIVIDE sausage evenly into 4 portions and shape into thin, round patties (about 5 inches in diameter).
  • PLACE a hard-boiled egg in the center of one patty and wrap sausage around the egg, pressing and crimping to cover the entire egg. Repeat with remaining hard-boiled eggs and sausage.
  • DIP a sausage-covered egg into beaten egg-milk mixture, turning to cover completely, then roll in chopped nuts, pressing gently so nuts stick and completely cover the surface. Repeat with remaining eggs, egg-milk mixture, and nuts.
  • PLACE eggs in the air fryer basket in a single layer at least an inch apart. Cook for 14 to 15 minutes, or until nuts are golden and sausage is cooked.
  • SERVE with Braised Spinach and Harissa Dipping Sauce recipes below).

Oven Method

  • PREHEAT oven to 450° F. Line a baking sheet with foil.
  • PREPARE recipe as directed except place sausage-covered eggs on the baking sheet and bake for 16 to 17 minutes or until nuts are deep golden.

Prepare Braised Spinach (optional)

  • IN a large saucepan, bring ½ cup Whole30-compatible beef broth to boiling.
  • REDUCE heat and add 4 cups baby spinach. Cook, gently stirring, just until spinach is wilted.
  • STIR in ½ teaspoon apple cider vinegar.
  • TRANSFER spinach to plates with a slotted spoon, and discard remaining broth.

Harissa Dipping Sauce (optional)

  • IN small bowl, stir together 2 tablespoons Whole30-compatible harissa sauce and 1 teaspoon Whole30-compatible Dijon mustard until smooth.

Bonus - How to Hard-Cook Eggs with an Air Fryer!

  • PREHEAT air fryer to 270°F. Place 6 eggs into the basket and cook for 14-15 minutes for a softer yolk, and 17 minutes for a firm yolk.
  • PLACE 6 eggs into the basket and cook for 14-15 minutes for a softer yolk, 17 minutes for a firm yolk.
  • TRANSFER eggs to a bowl of ice water and cool completely before peeling.
