5 Ingredient Chicken Salad

This 5 Ingredient Chicken Salad is perfect for work from home days when you want to make your lunch hour as seamless as possible. We recomend preparing several chicken breasts ahead of time to use throughout the week. You can slow cook breasts with 1 cup of chicken stock for 3 hours on high, or you can put a whole chicken in the slow cooker for 4 hours on high. Once cooked, shred and place in a container to store in the fridge, so you can use it to quickly put together this delicious protein salad.

Ingredients

  • 1 cup shredded chicken precooked
  • 2 T mayonnaise
  • 1 T crushed walnuts
  • 1 handful red grapes chopped
  • 1/4 small red onion chopped
  • 2 cups mixed greens
  • 1/2 avocado

Instructions

  • IN a medium bowl, combine chicken, mayo, walnuts, grapes, and onions
  • SERVE over mixed greens and top with sliced avocado
