Whole30 Garlic Herb Chicken Bacon Ranch Salad

Whole30 Garlic Herb Chicken is diced and mixed with a delicious—completely compatible bacon ranch dressing. This dish is perfect for a main entrée or served with extra vegetables in a tasty salad.

Whole30 Garlic Herb Chicken Bacon Ranch Salad

Ingredients  

  • 3 Whole30 Garlic Herb Chicken breasts drained from marinade and diced
  • 2 cups green beans
  • 6 pieces bacon sliced into small strips

Ranch Dressing

  • 2 large eggs
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 3 tbsp dill chopped
  • 1 tsp mustard powder
  • 1/2 tsp onion powder
  • 1/3 cup parsley chopped
  • 2 cloves garlic chopped
  • 1 pinch ground black pepper
  • 1.5 cups avocado oil

  • Food processor or immersion blender

Instructions

Prepare the Dressing

  • ADD eggs, lemon juice, apple cider vinegar, garlic, and all spices to a food processor, or bowl if using an immersion blender.
  • START the food processor and slowly stream in the avocado oil. Be careful not to pour the oil in too fast, as it will break the emulsion. Alternatively, slowly drizzle oil into the bowl while running the immersion blender.
  • ONCE all of the oil has been incorporated, add the herbs and blend briefly until herbs are finely chopped but not puréed, so you can still see bits of herbs strewn throughout.

Assemble

  • BRING a medium-sized pot of salted water to a rolling boil. Add green beans and cook for 3-4 minutes to achieve the desired texture. Strain well, shock in ice water for 5 minutes, and cut into 1-inch pieces.
  • SAUTÉ bacon in a pan until crispy, drain of access oil, and set aside.
  • COMBINE the bacon, diced Whole30 Garlic Herb Chicken, and green beans in a large mixing bowl. Then, add the desired amount of ranch dressing and mix until fully incorporated.
