5 Ingredient Loaded Baked Potato

Our 5 Ingredient Loaded Baked Potatoes recipe is perfect for a time when you have veggies languishing in the bottom of your veggie drawer that you need to use up! This meal is versatile and perfect for cleaning out the fridge. This recipe calls for Polish Sausage from our partners at Teton Waters Ranch, but you can keep a pre-cooked sausage of choice in your freezer at all times for a simple go-to protein option.

Ingredients
  

  • 4 Polish sausage links can sub pre-cooked sausage of choice
  • 1 Bell pepper
  • 1 Onion
  • 1 Zucchini
  • 4 Medium potatoes can sub sweet potato
  • 3 tbsp avocado oil can sub cooking oil of choice

Instructions
 

  • CHOP bell pepper, zucchini, onion, and sausage and combine in a skillet with cooking oil of choice.
  • SAUTE for a few minutes until sausage is warmed through and veggies are cooked al dente.
  • MEANWHILE, microwave russet or sweet potatoes for about 5 minutes, or until you can easily pierce them with a fork.
  • SLICE potatoes down the middle and add some ghee before topping with veggies, sausage, and sauces of choice like guacamole and ranch!
