A few notes on ingredients:
- Coconut cream: This isn’t the same as canned coconut milk. You want a can of unsweetened full-fat canned coconut cream, which you can find at most grocery stores. Coconut cream is a great dairy-free and Whole30-compatible swap for cream in soups and sauces! You’ll need at least 10 oz. of coconut cream for this recipe.
- DIY coconut cream: Place a cans of unsweetened full-fat coconut milk in the fridge for a few hours. Then, scrape the solidified cream off the top. (Save the coconut water underneath for your next smoothie.) Each can of coconut milk yields between 1 – 1.5 cups of coconut cream.
- Nutritional yeast: This isn’t the same as baker’s yeast. Instead, this is a vegan ingredient that helps give a “cheesy” flavor to sauces. Don’t skip it, as it gives a full flavor to this sauce.
- Potato or arrowroot starch: This acts like cornstarch, and thickens the sauce in a Whole30 way.

Ingredients
- 1 package APPLEGATE NATURALS® No Sugar Bacon
- 1 package APPLEGATE ORGANICS® Sweet Italian Sausage cut into ½” pieces
- 1 medium yellow onion finely diced
- 1 each red and yellow bell pepper finely diced
- 1 medium zucchini finely diced
- 1 cup Whole30-compatible chicken broth
- 1 cup coconut cream
- ¼ cup nutritional yeast
- 3 tbsp minced fresh garlic
- 2 tbsp potato or arrowroot starch
- 1 tsp Italian seasoning
- 1 tsp garlic salt additional to serve, to taste
- ¼ tsp black ground pepper
- ¼-½ tsp red pepper flakes optional, but recommended
- Fresh minced Italian parsley
- Spiralized veggie of choice for “noodles" to serve
Instructions
- HEAT a large skillet over medium heat. Cut or chop bacon into small pieces and cook in pan until crispy, breaking apart as you cook. Cook for 7-8 minutes, then remove from pan.
- DRAIN and set aside most of the bacon grease. Add the sausage, cooking 4 minutes on each side until browned. Remove from pan.
- CHOP all veggies. One easy way to do this is to seed and trim the vegetables then chop them in a large food processor, pulsing only a few times until they are finely chopped.
- TO SAVE TIME: Cook the veggies in a separate pan while the meats are cooking. Add 2 tablespoons of the reserved bacon grease or 2 tablespoons olive oil to a large pan, over medium heat. Add in all the chopped veggies, plus the minced garlic. Cook for 7-8 minutes until tender. Remove from pan.
- WHISK together the chicken broth, coconut cream, starch, nutritional yeast, Italian seasoning, garlic salt, and pepper. Add to the same pan you cooked the veggies in and simmer for 2-3 minutes until it thickens, stirring regularly.
- ADD the sausage and veggies back into the pan with the sauce. Stir until combined. Top with crumbled bacon, red pepper flakes (if using), and chopped parsley.
- SERVE over your favorite steamed or sautéed spiralized vegetable “noodle,” such as spiralized potato, carrot, or zucchini.
- FREEZE leftovers in a sealed container for up to 3 months.
