5 Ingredient Stuffed BBQ Chicken Sweet Potato

Our 5 Ingredient Stuffed BBQ Chicken Sweet Potato is extra simple if you prepare chicken ahead of time to use throughout the week. You can slow cook breasts with 1 cup of chicken stock for 3 hours on high, or you can put a whole chicken in the slow cooker for 4 hours on high. Once cooked, shred and place in a container to store in the fridge.

Ingredients
  

  • 1 cup shredded chicken cooked
  • 1 cup broccoli chopped
  • 1 small sweet potato can sub white potato
  • 1 small avocado chopped
  • 1/4 cup BBQ Sauce

Instructions
 

  • Preheat oven to 425
  • TOSS broccoli with salt, pepper, and cooking oil of choice and roast on parchment-lined baking sheet for 15 minutes
  • MICROWAVE sweet potato for three minutes or until you can poke a fork in it.
  • MIX precooked, shredded chicken with BBQ sauce
  • SERVE chicken and roasted broccoli over sweet potato and top with avocado
