5 Ingredient Green Eggs and “Ham”

Our 5 Ingredient Green Eggs and "Ham" is a fun breakfast option or, better yet, breakfast for dinner! Although we're big fans of teaching kids to love veggies, we're not against sneaking in some extra nutrition where we can. If you can make meals fun, there's a higher chance your kid might give it a try!

Ingredients
  

  • 1/2 package bacon
  • 1 tbsp ghee
  • 12 eggs
  • 6 handfuls baby spinach chopped

Instructions
 

  • PLACE bacon on a lined, rimmed cookie sheet and bake from cold at 425 for 15-20 minutes
  • MELT ghee in a pan and saute spinach. Add eggs and scramble together until cooked through.
  • WHEN bacon is cooked to desired crispiness, remove from oven and chop into bits with kitchen scissors. Sprinkle bacon bits on top of the eggs!
