Italian Spaghetti Squash

5 Ingredient Spaghetti Squash Bolognese

Our 5 Ingredient Spaghetti Squash Bolognese is a great way to pack in tons of nutrient-dense veggies into a simple, weeknight meal. We used pasta sauce from our partners at Lucini, but feel free to use what you have on hand.

Ingredients
  

  • 2 lbs ground beef
  • 1 spaghetti squash
  • 1 jar pasta sauce
  • 1 white onion diced
  • 1 cup Zucchini, mushrooms, peppers, and carrots chopped, can sub for veggies of choice
  • 1/4 cup extra virgin olive oil optional, for drizzling on top

Instructions
 

  • PREPARE the spaghetti squash (Place in slow cooker, whole, and cook on high for 3-4 hours or cut in half and microwave for 15 minutes)
  • ON the stovetop, sauté the onions and chopped veggies until soft. If you’re worried about picky eaters, you can puree cooked veggies using a blender or immersion blender
  • ADD ground beef and cook through. Mix in jar of pasta sauce and pureed veggies, if applicable. For a vegetarian version, omit the ground beef
  • SERVE beef, veggie, and sauce mixture over the spaghetti squash. Drizzle with extra virgin olive oil for plated fat
