This quick and satisfying dish layers tender, garlicky ground pork over lightly wilted Napa cabbage. These simple whole-food ingredients are brought to life with a bold, creamy tahini sauce kissed with a bit of heat (or more, if you like spice). As usual, all of the recipes in The Whole30 Fast & Easy are gluten-free, grain-free, dairy-free, soy-free, peanut-free, and free from added sugar.
Tip
If you’re using chicken for this, 100% ground chicken thigh is the closest in fat content to ground pork (which is usually 15% to 16% fat). In a pinch, you could use ground chicken made from a mix of white and dark meat, which is 7% or 8% fat. (It will be labeled 92% or 93% lean.) Don’t use ground chicken breast here, which is usually about 99% lean, as your chicken will end up dry.
