We took inspiration from recent @Whole30Recipes contributors like Paleo Paparazzi and Sodium Girl and built these Pho-inspired mason jar meals made easy with Vital Proteins Bone Broth Collagen. Use the guide below to create your ideal meal in a jar. When you’re ready to eat, just add boiling water, re-seal the jar, shake it, and let it steam for 5 minutes.

Build your Bone Broth Soup Jar

The Must-Haves:

The Add-Ins

  • Aromatics: minced garlic, lemongrass, or ginger
  • Fresh herbs: cilantro, basil, thyme, sage, scallions
  • Thinly-sliced mushrooms
  • Baby bok choi
  • Bean sprouts
  • Thinly-sliced jalapeno

Final Touches

  • Sesame oil
  • Fish sauce
  • Coconut aminos
  • Furikake

Option #1: Chicken and Zucchini

Ingredients

Vital Proteins Chicken Bone Broth Collagen; zucchini spirals; shredded chicken; lime; salt + pepper; minced garlic, lemongrass and ginger; baby bok choi; basil + scallions; sesame oil + fish sauce

Build it

Place a large handful of zucchini spirals in the bottom of your jar. Add in the shredded chicken, then sprinkle in a scoop of Chicken Bone Broth Collagen. Add the aromatics, baby bok choi and herbs, and sesame oil, fish sauce and lime.

Option #2: Egg and Butternut Squash

Ingredients

Vital Proteins Chicken Bone Broth Collagen; butternut squash spirals; 2-3 soft boiled eggs; lime; salt + pepper; minced garlic, lemongrass and ginger; sliced mushroom; basil + cilantro + scallions; sesame oil + fish sauce

Build it

Place a large handful of butternut squash spirals in the bottom of your jar. Add in the (peeled and sliced) eggs, then sprinkle in a scoop of Chicken Bone Broth Collagen. Add the aromatics, mushroom slices and herbs, and sesame oil, fish sauce and lime.

Option #3: Beef and Sweet Potato

Ingredients

Vital Proteins Beef Bone Broth Collagen; sweet potato spirals; shredded beef; lime; salt + pepper; minced garlic, lemongrass and ginger; sliced mushroom; bok choi; basil + cilantro + scallions; sesame oil + fish sauce

Build it

Place a large handful of sweet potato in the bottom of your jar. Add in the shredded beef, then sprinkle a scoop of Beef Bone Broth Collagen over the top. Add the aromatics, mushroom slices, bok choi and herbs, and sesame oil, fish sauce and lime.
