Whole30 House Ranch Walnut-Crusted Chicken

Tender, juicy bites of chicken marinaded in Whole30 House Ranch Dressing is baked with an herbed walnut crust, giving this dish the most mouth-watering flavor and texture. Serve this with roasted potatoes and drizzle it all with a bit more of our Ranch Dressing for an easy meal that’s dressed to impress!

Whole30 House Ranch Walnut-Crusted Chicken

Ingredients  

Chicken

  • 1.5 lbs boneless, skinless chicken breasts (or 4 medium)
  • 4 tbsp Whole30 House Ranch dressing
  • 2 tbsp olive or avocado oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Walnut Crust

  • 1/4 cup chopped walnuts
  • 1 slice thick bacon cooked & crumbled
  • 3 med garlic cloves peeled & minced
  • 1/2 cup fresh parsley minced
  • 2 tbsp Whole30 House Ranch Dressing
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Garnishes

  • 4 tbsp Whole30 House Ranch dressing
  • 2 sprigs fresh dill minced
  • 2 tbsp fresh parsley minced

Instructions

  • Prepare your chicken marinade by adding the Whole30 House Ranch dressing, olive or avocado oil, sea salt, black pepper and garlic powder to a large plastic bag with a seal. Seal it and rub together with your hands so until well combined.
  • Open the bag and add your chicken. Seal the bag and place flat on the countertop so that the marinade is evenly coating the chicken. Allow to marinate for 30 minutes and up to overnight.
  • Add your walnut crust ingredients to a food processor and pulse until fine and crumbly, scraping the sides of the bowl as needed.
  • Preheat your oven to 350°F (180°C).
  • Place the chicken breasts on a baking tray lined with parchment paper.
  • Using your hands, top each piece of chicken with the walnut crust, pressing it firm to stay in place.
  • Rub some olive or avocado oil on a piece of aluminum foil and cover your chicken with the oiled side to prevent foil from sticking to your chicken when you remove it.
  • Bake in the oven until chicken is cooked through or reaches 165°F (74°C), about 35 minutes.
  • Remove foil and return baking sheet to the oven.
  • Turn on your oven’s broiler and allow the tops of the chicken to golden, about 1-2 minutes.
  • Turn off the oven and transfer chicken to a dish or cutting board to allow to cool before serving.
  • Garnish with Whole30 House Ranch dressing, minced dill and parsley.
  • Store any leftovers in the fridge for up to 3 days.
