Grilled Delicata Bacon Ranch Salad

Ingredients
1 large bag of spring mix or similar greens
1/2 small onion
1 large delicata squash
1 bag of EPIC Uncured Bacon bits
1/4 cup pepitas (pumpkin seeds)
Tessemae’s Ranch dressing
Oil of choice for grilling

Instructions
PUT oil in a pan and heat on med-high. While oil is heating up, slice squash and onion thinly (remove seeds from squash). Place onion in your pan and grill until softened. Place squash in pan and grill until browned and softened.

ARRANGE spring mix onto plates and top with grilled veggies, EPIC bits, pepitas and Tessamae’s Ranch dressing.

Citrus Chicken Balsamic Salad

Ingredients
2-3 cups tatsoi or spinach leaves
2 fuyu persimmons, sliced (apples may be substituted)
2 oranges, with peel trimmed off and sliced into rounds
½ cup raw unsalted pecans
1 large ripe firm avocado, sliced
1 bag of EPIC Sesame Chicken bits
Tessemae’s Balsamic dressing

Instructions
SLICE a little off the top and bottom of your oranges, this will make them more stable for trimming. Trim oranges by using a sharp knife and starting from the top of the orange slice downwards following the curve of the fruit. Try to cut away all of the skin and the pith without also taking too much of the fruit. Once the peel is removed, turn on it’s side and cut into thin rounds. Set aside.

TRIM the tops off of persimmons. Lay persimmon on it’s side and slice into rounds, then slice in half. Set aside.

SLICE avocado in half and remove pit, peel off outer skin and place flat side down. With a sharp knife, slice into thin pieces. Set aside.

ARRANGE all salad ingredients onto a plate and top with Epic’s Sesame chicken bits and Tessamae’s Balsamic dressing. See photo for plating suggestion.

Grilled Avocado Bacon Caesar Salad with Cauliflower “Croutons”

Ingredients
1 l bag of spring mix or similar greens
1/4 cup raw unsalted slivered almonds
1 large avocado, sliced & grilled
1 bag of EPIC Uncured Bacon bits
1 cup cauliflower florets, broken into small bite size pieces
Tessemae’s Caesar dressing
Oil of choice for grilling

Instructions
HEAT oven to 425 degrees.  Mix cauliflower bits and oil with salt and pepper to taste in a bowl and toss to coat. Place on a lined pan and roast for 15-20 mins. or until browned and crispy. While cauliflower is roasting, toast your almonds in an oiled pan until browned. Set aside.

SLICE avocado in half and remove pit, peel off outer skin and place flat side down. With a sharp knife, slice into thin pieces. Place in an oiled pan and cook until browned on both sides.  Set aside.

ARRANGE spring mix onto plates and top with roasted cauliflower, toasted almond slivers, Epic’s Uncured bacon bits and grilled avocado, finish off with Tessamae’s Caesar dressing
