Cashew Mango Snack Mix

Total Time 20 minutes

Ingredients  

  • 2 cups 1/4-inch thick okra slices
  • 2 tbsp avocado oil
  • 1/4 tsp salt
  • 1/4 tsp ground cumin
  • 1/8 tsp turmeric
  • 1/8 tsp cayenne
  • 1/2 cup diced Whole30 compatible dried mango
  • 1/2 cup roasted cashews

Instructions

  • WASH and rinse okra thoroughly with water. Pat until completely dry using a kitchen towel.
  • IN a medium microwave-safe bowl, toss okra with avocado oil until well coated. Season with salt, cumin, turmeric, and cayenne. Toss again to coat. (If mixing with your hands, make sure your hands are also completely dry.)
  • PARTIALLY cover and microwave on high for 8 minutes. Uncover and stir. Microwave in 1-minute intervals until crispy but not burned, stirring after each, 2 to 3 minutes more.
  • SPREAD on a rimmed baking pan to cool (okra will continue to crisp as it cools) for about 10 minutes.
  • TRANSFER to a medium bowl. Add mango and cashews and toss to combine.
