“Masala” refers to a mixture of ground spices used in Indian cooking, and here, it transforms this simple hash into something truly special. Garam masala, turmeric, coriander, and paprika create layers of warmth and depth. The ghee enhances every bite with a buttery, dairy-free richness. 

This hash is hearty enough to stand on its own, but if you have leftovers, they store well in the fridge for 3 to 4 days. Reheat and top with freshly fried eggs, or serve alongside grilled chicken, steak, or fish for a satisfying meal.

Pro tip

Brown the onions well before adding your spices to deepen their flavor. Browning the onions will help bring out their flavor and add richness to the dish. Let the tomatoes soften by gently pressing them with the back of your spoon—they’ll help create a rich, saucy base for the sweet potatoes. 

Ingredient swaps

Masala Sweet Potato Hash and Eggs

Ingredients  

  • 1 tbsp ghee
  • 1 medium onion diced
  • 2 large garlic cloves minced
  • 1 tsp garam masala spice
  • 2 tsp coriander powder
  • ¼ tsp turmeric powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 large sweet potato peeled and diced into ½-inch cubes
  • 2-3 tbsp water
  • 2 cups of greens of choice such as baby spinach or kale
  • ½ small lemon juiced (about 1½ tbsp)
  • 4 eggs
  • Compatible chili oil and fresh cilantro for garnish

Instructions

  • HEAT the ghee over medium flame in a large skillet or pan.
  • ADD the diced onions and garlic and saute for 4-5 minutes until the onion starts to brown.
  • ADD the spices to your onions and cook for about 1 minute.
  • STIR in the cherry tomatoes and cook for approximately 5 to 7 minutes, until the tomatoes have softened. You can help the tomatoes soften by gently pressing down on them with the back of your spatula/spoon.
  • ADD the sweet potatoes along with the water. Give everything a mix and cover to cook for 10 to 12 minutes, or until the sweet potatoes are tender.
  • STIR in the greens of choice along with a squeeze of half a lemon and cook for another 1 minute.
  • MAKE four wells in the sweet potato hash and crack an egg in each. Cover and let cook until eggs are to your liking.
  • REMOVE the skillet from heat, and drizzle with compatible chili oil, salt & pepper to taste, and garnish with fresh cilantro.
