Looking for a Whole30 compatible twist on taco Tuesday? The hollowed out zucchini makes a perfect vessel for your protein and all the delicious toppings.

Ingredients
- 2 sm/med zucchini squash
- 1 lb ground beef
- 3 tbsp taco seasoning make your own, or buy premade from Siete!
- salsa for topping
- avocado/guacamole for topping
Instructions
- CUT zucchini squash in half and scrape out some of insides to make a trench.
- SPRINKLE with salt and pepper and bake for about 10 minutes at 350°F.
- MEANWHILE, brown ground beef in a skillet and add in taco seasoning to taste.
- REMOVE zucchini from oven and fill with ground beef.
- TOP with salsa and sliced avocado or guacamole.
