Cilantro & Lime Thai-Inspired Fish En Papillote

Steaming fish gives you tender, flavorful results, and making it at home is easier than you think. Cilantro and Lime Thai-Inspired Fish En Papillote comes together in about 20 minutes. By cooking the fish in parchment paper, you’ll lock in moisture and infuse every bite with flavor. Even better? The cleanup is nearly effortless. 

This Thai-inspired dish features a flavorful marinade made with coconut milk, coconut aminos, lime juice, garlic, and coriander. You can use any kind of fish you like. Salmon, sea bass, and barramundi all work beautifully. For the vegetables, we’ve included broccolini and green beans, but you can easily swap in what you have on hand. Zucchini, cauliflower, spinach, bell pepper, and bok choy are some other great vegetables to try.

If you enjoy a little heat, we’re using Thai bird’s eye chili for an extra kick. If you prefer a milder flavor, simply leave the chili out entirely. 

Making parchment parcels can be tricky, but here are two tips that will help make it easier:

  • Crumple your parchment paper before putting your fish and veg in and folding your parcel.  Crumpling the parchment paper makes it MUCH easier to work with and will hold your folds better.  
  • If you can’t seem to get your parcel to hold its fold, staple it instead!  If you need a visual guide, this video is a great demo on how to wrap the perfect fish en papillote.

Cilantro & Lime Thai-Inspired Fish En Papillote

Ingredients  

Sauce

  • ¼ cup compatible coconut milk
  • 2 tsp compatible fish sauce
  • Juice of 1 lime (about 3 tbsp)
  • 3 cloves of garlic chopped
  • 2 scallions chopped
  • ¼ cup chopped cilantro (leaves and stems)
  • 1 bird's eye chili chopped (deseed for less heat or omit)

Fish & Vegetables

  • 6 to 8 broccolini stalks washed and trimmed
  • handful of green beans washed
  • 2 fish filets of choice
  • 1 lime sliced
  • salt to taste

Instructions

  • PREHEAT the oven or air fryer to 350℉/180℃.
  • ADD all your sauce ingredients to a bowl and stir to combine.
  • TEAR 2 pieces of parchment paper large enough to fold your fish and vegetables in.
  • PLACE your green beans in the center of each piece of parchment paper and place the broccolini on the sides. Season with salt.
  • PLACE your fish pieces on top of the beans and season with salt.
  • SPOON your sauce evenly over the two fish filets and vegetables, then place a few slices of lime on top.
  • FOLD your parchment paper to make 2 parcels. Place your parcels on a baking tray or your air-fryer basket/tray
  • BAKE or air fry your parcels. Bake time may vary depending on the thickness of your fish, but generally 20 to 25 minutes in the oven or 12-15 minutes in the air fryer.
