Oh how we love the flavors in this chimichurri sauce! It can immediately elevate meat, vegetables, or any dish. It only takes 5 minutes to make and uses basic ingredients you can find at most grocery stores. That makes this sauce accessible and budget-friendly.
What is Chimichurri?
Chimichurri is an uncooked sauce common to Argentine and Uruguayan cuisines used as a condiment or a marinade. It’s similar to pesto but traditionally made with flat-leaf parsley or cilantro instead of basil.
Our chimichurri sauce incorporates either parsley or cilantro, red wine vinegar, fresh garlic cloves, dried oregano, dried red pepper flakes, olive oil, onion, and salt and pepper. This sauce boasts an array of deliciously fresh flavors!
Tips and tricks:
To create this Whole30 chimichurri, you can use either cilantro or flat-leafed parsley, selecting the one that suits your taste or is more readily available. If you opt for parsley, using only the leaves is advisable since stems can be bitter. With cilantro, both stems and leaves can be used. Additionally, we recommend adding the olive oil after processing the other ingredients. Incorporating the oil manually at the end helps prevent oxidation, which can lead to bitterness.
If you don’t have a food processor, an alternative method involves finely chopping the parsley or cilantro, onion, and garlic by hand. Afterward, you can stir in the remaining ingredients for the chimichurri sauce.
Ingredients
- 1/2 cup packed cilantro or parsley leaves (if using parsley, leaves only, no stem)
- 1/4 cup red wine vinegar
- 4 large garlic cloves peeled
- 1/4 medium yellow onion peeled
- 1-2 tsp red pepper flakes depending on desired heat
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup olive oil
Instructions
- COMBINE all ingredients except the olive oil in a food processor until finely chopped and well combined.
- POUR the mixture into a small bowl and then pour the olive oil on top. Gently whisk to combine. Ideally let the mixture sit for 15 minutes to let the flavor combine before serving.
- SERVE on top of grilled meat, such as our Steak Skewers, or roasted veggies.
- NOTE: Sauce is best served fresh, but can be stored in the fridge for 3-4 days.
