Caraway-Spiced "Pork" Skillet

Looking for a breakfast switch-up? We’ve got you covered. This Plant-Based Caraway-Spiced “Pork” Skillet—an exclusive bonus recipe from The New Whole30—is about to become your new morning go-to.

The simple one-skillet meal packs major flavor, while keeping the clean up easy. Broccoli slaw, crisp apple, and onion form the crunchy, slightly sweet base. But it’s the spices that really make this dish shine. Crushed caraway seeds bring warmth and a subtle pepper bite, dry mustard adds tangy sharpness, lemon zest brightens with a hint of citrus, and paprika brings a gentle, smoky heat. Want to turn the heat up a notch? A dash of cayenne pepper will do the trick.

For a satisfying protein boost, stir in a savory plant-based “pork” to round out the dish. Pair it with pistachios and fresh berries on the side for extra texture, flavor, and balance.

This Plant-Based Caraway-Spiced “Pork” Skillet has everything you need to start your day right.

Easy swaps & ingredient additions

This plant-based recipe can be adjusted to fit your needs and taste preferences. Below are some easy swaps and ingredient additions you can make:

  • Pick a different apple: If Granny Smith Apples are a bit too tart for you, swap it out for something sweeter, like a Honeycrisp or a Gala apple for a more mild sweetness.
  • Plant-based protein: Not in the mood for “pork”? No problem. Use scrambled tofu or roasted chickpeas as your protein instead.
  • Boost the veggies: Add in some shredded Brussels sprouts, green or red shredded cabbage, or shredded carrots. They’ll offer a similar texture, but create an entirely new flavor profile to the dish.

No matter what swaps or additions you make, this Plant-Based Caraway-Spiced “Pork” Skillet will be sure to hit the spot.

Caraway-Spiced “Pork” Skillet

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 1 package (12 to 16-ounce) broccoli slaw
  • ½ of a small onion cut into slivers
  • 1 small Granny Smith apple cut into slivers
  • 1 tbsp coconut oil or extra virgin olive oil
  • 2 tsp caraway seeds crushed
  • 1 tsp dry mustard
  • 1 tsp grated lemon zest
  • ½ tsp paprika
  • ½ tsp coarse salt
  • ¼ tsp cayenne pepper (optional)
  • 1 box (10-oz) Plant-Based Whole30-compatible "pork"
  • pistachios
  • fresh berries

Instructions

  • IN a large skillet, cook the broccoli slaw, onion, and apple in coconut oil over medium heat until crisp-tender, 3 to 4 minutes. Stir in caraway seeds, mustard, lemon zest, paprika, salt, and cayenne pepper, if using.
  • PUSH the vegetables to the edge of the skillet, creating an empty center. Add pork and cook, stirring occasionally, until heated through, 2 to 3 minutes. Stir the broccoli slaw and pork together.
  • SERVE with pistachios and berries on the side.

Notes

Tip: This slaw makes a great side dish for any meal. If you can’t find a compatible “pork” product, you can use scrambled seasoned tofu or roasted chickpeas as your protein.
